Sweet Corn Chowder

Ingredients
  

4 cups fresh or frozen sweet corn kernels

1 medium onion, diced

2 medium potatoes, peeled and diced

2 carrots, diced

3 cups vegetable or chicken broth

1 cup heavy cream

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions
 

Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

    Add Vegetables: Stir in the diced potatoes and carrots, allowing them to cook for another 5 minutes. This helps to develop flavor and soften the vegetables slightly.

      Add Broth and Corn: Pour in the vegetable or chicken broth and add the sweet corn kernels. Season with smoked paprika, thyme, salt, and pepper. Bring the mixture to a boil.

        Simmer: Reduce the heat to low and let the chowder simmer for about 15-20 minutes, or until the potatoes are fork-tender.

          Blend (optional): If you prefer a creamier texture, use an immersion blender to puree about half of the chowder directly in the pot. Alternatively, carefully transfer about half of the chowder to a blender and puree before mixing it back in.

            Add Cream: Stir in the heavy cream and let the chowder warm through, cooking for an additional 5 minutes. Taste and adjust seasoning if needed.

              Serve: Ladle the chowder into bowls and garnish with fresh chives or parsley for a pop of color and freshness.
