4 ears of fresh sweet corn, husked and cut into thirds

8 slices of thick-cut bacon, cut into 1-inch pieces

1 medium red bell pepper, diced

1 medium zucchini, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

4 large pieces of aluminum foil (about 12x12 inches)

Preheat the Grill/Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C).

    Prepare the Foil Packets: Lay out four large pieces of aluminum foil on a flat surface. Each piece should be about 12x12 inches.

      Assemble the Ingredients: In a large bowl, combine the sweet corn pieces, bacon, diced red bell pepper, and diced zucchini. Drizzle with olive oil, and sprinkle garlic powder, smoked paprika, salt, and pepper over the mixture. Toss everything together until well coated.
