Ingredients

1 cup fresh sweet corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

2 large eggs

1/4 cup milk

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 tablespoon sugar

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup finely chopped fresh chives

1/2 teaspoon garlic powder (optional)

1/4 cup grated cheese (like cheddar or pepper jack, optional)

2 tablespoons olive oil (for frying)

Sour cream or yogurt (for serving, optional)

Instructions

Prepare the Mix: In a large mixing bowl, combine the sweet corn kernels, flour, eggs, and milk. Whisk until just combined.

Add Dry Ingredients: Stir in the baking powder, baking soda, sugar, salt, black pepper, and garlic powder (if using). Mix until smooth.

Incorporate Chives and Cheese: Fold in the chopped chives and cheese (if using) into the batter until evenly distributed.

Heat the Pan: Heat a large skillet over medium heat and add one tablespoon of olive oil, allowing it to heat up.

Cook the Fritters: Once the oil is hot, scoop about 1/4 cup of the batter into the skillet, gently pressing it down to form a pancake shape. Repeat for multiple fritters, ensuring not to overcrowd the pan.

Fry Until Golden: Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through. Add more oil as needed for subsequent batches.

Remove and Drain: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.

Serve: Serve warm, topped with a dollop of sour cream or yogurt if desired, and additional chives for garnish.
