Ingredients

2 cups plain Greek yogurt

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/2 cup mixed nuts (e.g., almonds, cashews, pecans), roughly chopped

1/4 cup chia seeds

1 teaspoon pure vanilla extract

Pinch of sea salt

1/2 cup dark chocolate chips (optional for drizzling)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir until the mixture is smooth and well combined.

Incorporate Dry Ingredients: Add the shredded coconut, chopped nuts, and chia seeds to the yogurt mixture. Gently fold them in until they are evenly distributed throughout the yogurt.

Shape the Clusters: Line a baking sheet with parchment paper. Using a tablespoon or ice cream scoop, portion out the yogurt mixture onto the prepared baking sheet, forming clusters. Leave some space between each cluster for even freezing.

Freeze the Clusters: Place the baking sheet in the freezer and allow the clusters to freeze for at least 2 hours, or until solid.

Optional Chocolate Drizzle: If using dark chocolate, melt it in a microwave-safe bowl in 30-second increments, stirring between each interval until smooth. Once the yogurt clusters are frozen, drizzle the melted chocolate over them using a spoon. Return the clusters to the freezer for an additional 15-30 minutes to set the chocolate.

Serve & Store: Once the chocolate is set, carefully remove the clusters from the parchment paper and transfer them into an airtight container. Store in the freezer for up to 3 weeks. Enjoy these delightful treats whenever you crave a sweet snack!
