Ingredients

3 medium-sized apples (such as Honeycrisp or Fuji)

1 cup rolled oats

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup unsalted butter, melted

1/4 cup chopped pecans or walnuts (optional)

1/2 cup mini marshmallows (optional)

Puff pastry (1 sheet, thawed)

1 egg (beaten, for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Apples: Core the apples and slice them into thin rings, about 1/4 inch thick. You can choose to peel them or leave the skin on for added texture.

Make the Filling: In a medium bowl, combine the rolled oats, brown sugar, ground cinnamon, nutmeg, and melted butter. Mix well until the oats are coated and the mixture is crumbly. If using, stir in the chopped pecans or walnuts for added crunch.

Assemble the Bites: Roll out the puff pastry sheet on a lightly floured surface. Cut it into squares (about 3x3 inches each). Place a ring of apple in the center of each square. Add a spoonful of the oat filling on top of each apple ring. If you like, put a few mini marshmallows on top for a gooey sweetness.

Wrap and Seal: Fold the corners of the puff pastry squares up towards the center, pinching them together to securely enclose the apple and filling. You can also twist the corners for a decorative touch.

Egg Wash: Brush the tops of each pastry pocket with the beaten egg to give them a golden color when baked.

Bake: Place the apple bites on the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.

Cool and Serve: Allow the sweet cinnamon apple bites to cool for a few minutes before serving. They are delightful warm and can be served with a scoop of vanilla ice cream or a drizzle of caramel sauce if desired.
