1 cup Medjool dates, pitted and chopped

1 cup raw walnuts (or almonds), lightly toasted

1/2 cup unsweetened cocoa powder

1/4 cup dark chocolate chips (70% cacao or higher)

1 tsp vanilla extract

A pinch of sea salt

1/4 cup shredded unsweetened coconut (optional, for rolling)

1/4 cup crushed nuts or cacao nibs (optional, for rolling)

Instructions
 

Prepare the Nuts: In a food processor, add the toasted walnuts (or almonds) and pulse until coarsely chopped. You want a crumbly texture, not a paste. Transfer them to a bowl and set aside.

    Blend Dates: In the same food processor, combine the pitted and chopped Medjool dates, cocoa powder, dark chocolate chips, vanilla extract, and a pinch of sea salt. Process until the mixture forms a sticky, cohesive dough. You may need to scrape down the sides of the bowl a couple of times to ensure everything is well combined.

      Combine: Add the pulverized nuts back into the food processor with the date mixture. Pulse a few times until well mixed, but still leaving some texture from the nuts.

        Shape Truffles: Using your hands, take about a tablespoon of the mixture and roll it into a small ball. Repeat until all the mixture is formed into truffles.

          Roll (Optional): If desired, you can roll the truffles in shredded coconut or crushed nuts/cacao nibs for added texture and appeal. Simply place your rolling ingredients in a shallow bowl and gently roll each truffle until coated.

            Chill: Place the truffles on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to set.
