Sweet Chili Chicken Stir Fry

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas, trimmed

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prepare the Chicken: In a large bowl, season the sliced chicken with salt and pepper. Set aside for about 10 minutes.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Chicken: Add the chicken to the skillet in a single layer. Sauté for about 5-7 minutes or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Stir Fry the Vegetables: In the same skillet, add the minced garlic and ginger. Stir for about 30 seconds until fragrant. Then add the sliced red and yellow bell peppers and snap peas. Stir-fry for another 3-4 minutes until the veggies are crisp-tender.

          Combine Chicken and Sauces: Return the cooked chicken to the skillet. Pour in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Toss everything together until well coated.

            Thicken the Sauce: Stir in the cornstarch mixture to thicken the sauce. Cook for an additional 1-2 minutes until the sauce has thickened slightly.

              Add Green Onions: Sprinkle the chopped green onions over the stir-fry and give it a final toss.
