Sweet Carrot Cake Energy Bites

Ingredients
  

1 cup rolled oats

1/2 cup almond flour

1/2 cup shredded carrots (about 2 medium carrots)

1/4 cup honey or maple syrup

1/4 cup unsweetened almond butter (or any nut butter of your choice)

1/4 cup shredded coconut (unsweetened)

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/4 cup raisins or chopped walnuts (optional)

2 tbsp mini chocolate chips (optional, but recommended!)

Instructions
 

Prep the Carrots: Start by peeling and grating the carrots using a fine grater. Set aside.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, shredded coconut, ground cinnamon, ground nutmeg, and salt. Stir well to ensure everything is evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. The mixture will be thick. If adding raisins or walnuts, fold them in at this stage, along with the grated carrots.

          Chill the Dough: Cover the mixing bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This will make it easier to form into balls.

            Form Energy Bites: Once the mixture is chilled, use your hands to scoop out about a tablespoon of the dough and roll it into a ball. repeat until all the mixture is used up.

              Optional Coating: If desired, roll the energy bites in some extra shredded coconut or chopped nuts for added texture.

                Store and Enjoy: Place the energy bites in an airtight container and store in the refrigerator for up to a week. Enjoy them as a healthy snack or post-workout treat!
