Ingredients

1 lb large shrimp, peeled and deveined

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sriracha (adjust to taste)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Fresh cilantro (optional, for garnish)

Instructions

Marinate the Shrimp: In a large bowl, combine honey, soy sauce, rice vinegar, sriracha, minced garlic, and grated ginger. Add the shrimp and gently toss to coat. Let the shrimp marinate for at least 15 minutes at room temperature.

Heat the Pan: In a large skillet or wok, heat olive oil over medium-high heat until shimmering.

Cook the Shrimp: Add the marinated shrimp to the skillet in a single layer, ensuring they aren't crowded. Cook the shrimp for about 2-3 minutes on one side without moving them, allowing them to caramelize.

Flip the Shrimp: Gently flip the shrimp and cook for another 1-2 minutes until they are pink and opaque.

Reduce Sauce: Pour the remaining marinade into the pan and let it simmer for an additional 1-2 minutes, allowing the sauce to thicken slightly.

Season: Season with salt and pepper to taste, adjusting the sweetness or spiciness by adding more honey or sriracha as desired.

Garnish and Serve: Remove from heat and garnish with sliced green onions, sesame seeds, and fresh cilantro if using. Serve immediately over rice or noodles, or in lettuce wraps for a low-carb option.
