Sweet and Spicy Glazed Salmon Bowls

Ingredients
  

For the Salmon:

4 salmon fillets (6 oz each)

ΒΌ cup honey

3 tablespoons soy sauce

2 tablespoons sriracha (adjust for spice preference)

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon sesame oil

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

For the Bowls:

2 cups cooked jasmine rice (or brown rice)

1 cup edamame (shelled)

1 cup steamed broccoli florets

1 avocado, sliced

1 small cucumber, thinly sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Glaze: In a medium bowl, whisk together the honey, soy sauce, sriracha, rice vinegar, minced garlic, grated ginger, and sesame oil until well combined.

    Marinate the Salmon: Season the salmon fillets with salt and pepper. Place them in a shallow dish and pour half of the glaze over the top. Let marinate for at least 15 minutes, flipping halfway through for even flavor distribution.

      Cook the Salmon: Preheat the grill or a non-stick skillet over medium-high heat. Remove the salmon from the marinade (discard the used marinade) and grill or sear each fillet for about 4-5 minutes on each side, or until cooked through and the fish flakes easily with a fork. Brush the remaining glaze on the salmon during the last minute of cooking.

        Assemble the Bowls: Prepare the rice as per package instructions. In bowls, start with a base of jasmine or brown rice, then layer with edamame, steamed broccoli, avocado slices, and cucumber.

          Add the Salmon: Place a cooked salmon fillet on top of each bowl.

            Garnish and Serve: Sprinkle sesame seeds and sliced green onions over the salmon. Add fresh cilantro and a lime wedge on the side for an extra burst of flavor.

              Enjoy! Drizzle any additional glaze over the assembled bowls if desired and serve immediately.
