Sweet and Sour Pineapple Meatballs

For the Meatballs:

1 pound ground pork (or turkey if preferred)

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 egg, beaten

1 tablespoon soy sauce

1 teaspoon ginger, grated

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for heat)

For the Sweet and Sour Sauce:

1 cup pineapple juice

1/4 cup rice vinegar

1/4 cup ketchup

1/4 cup brown sugar

2 tablespoons soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 cup diced fresh pineapple (or canned, drained)

1 bell pepper, diced (red or green)

1/2 cup onion, diced

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Make Meatballs: In a large bowl, combine ground pork (or turkey), breadcrumbs, chopped green onions, minced garlic, beaten egg, soy sauce, ginger, salt, pepper, and red pepper flakes if using. Mix until fully incorporated, but do not overmix.

      Form Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.

        Bake Meatballs: Bake meatballs in the preheated oven for 20-25 minutes, or until they're browned and cooked through.

          Prepare Sweet and Sour Sauce: In a saucepan, combine pineapple juice, rice vinegar, ketchup, brown sugar, and soy sauce. Bring to a simmer over medium heat.

            Thicken the Sauce: Once simmering, add the cornstarch slurry to the saucepan and stir continuously until the sauce thickens. This should take about 2-3 minutes. Add diced pineapple, bell pepper, and onion, allowing them to cook for an additional 3-5 minutes until slightly tender.

              Combine Meatballs and Sauce: Once the meatballs are done baking, gently toss them in the sweet and sour sauce until evenly coated.

                Serve: Serve immediately over steamed rice or noodles, garnished with additional chopped green onions if desired.
