Sweet and Sour Chicken

Ingredients
  

For the chicken:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

2 large eggs, beaten

Vegetable oil for frying

For the sweet and sour sauce:

1/2 cup pineapple juice (fresh or canned)

1/4 cup rice vinegar

1/4 cup ketchup

1/4 cup brown sugar

1 tbsp soy sauce

1 tsp cornstarch dissolved in 2 tsp water (for thickening)

For stir-frying:

1 red bell pepper, diced

1 green bell pepper, diced

1 cup pineapple chunks (fresh or canned)

1 medium onion, diced

2 cloves garlic, minced

1 tbsp vegetable oil

Sesame seeds and green onions for garnish

Instructions
 

Prepare the Chicken:

    - In a bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

      - Dip each piece of chicken into the beaten eggs, then coat them thoroughly in the flour mixture.

        Fry the Chicken:

          - Heat vegetable oil in a deep skillet or wok over medium-high heat. Fry the coated chicken pieces in batches until golden brown and cooked through, about 5-6 minutes. Remove and drain on paper towels.

            Make the Sweet and Sour Sauce:

              - In a saucepan over medium heat, combine pineapple juice, rice vinegar, ketchup, brown sugar, and soy sauce. Stir until the sugar dissolves.

                - Bring the mixture to a gentle boil, then reduce heat and add the dissolved cornstarch. Stir for a couple of minutes until the sauce thickens. Set aside.

                  Stir-fry the Vegetables:

                    - In the same skillet, add 1 tablespoon of vegetable oil. Sauté the diced onion for about 2 minutes, then add the minced garlic and cook for another minute.

                      - Add the diced red and green peppers and cook until slightly tender, around 3-4 minutes.

                        - Stir in the pineapple chunks and cook for another minute.

                          Combine Everything:

                            - Add the fried chicken to the skillet with the sautéed vegetables. Pour the sweet and sour sauce over the top and toss everything together until the chicken and veggies are well coated.

                              Serve:

                                - Serve the Tropical Sweet and Sour Chicken over steamed rice or noodles. Garnish with sesame seeds and sliced green onions for an extra pop of flavor.
