3 ripe plantains (yellow with a few brown spots)

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 cup black beans, rinsed and drained

1 cup cooked quinoa

1/2 cup corn kernels (fresh or frozen)

1/2 cup diced red bell pepper

1/2 cup diced red onion

1 teaspoon cumin

1/2 teaspoon cayenne pepper (optional for heat)

1/2 cup shredded cheese (cheddar, mozzarella, or vegan cheese)

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Plantains: Cut each plantain in half lengthwise. Carefully scoop out a small portion of the flesh from the middle of each half to create a boat shape, being careful not to pierce the skin.

      Season the Boats: In a bowl, mix the olive oil, salt, black pepper, and smoked paprika. Brush the insides of the plantain boats with the olive oil mixture and place them on a baking sheet lined with parchment paper.

        Cook the Vegetables: In a large skillet over medium heat, add the diced red onion and red bell pepper. Sauté for about 3-4 minutes until they begin to soften. Add the black beans, corn, quinoa, cumin, and cayenne pepper (if using). Stir well and cook for an additional 2-3 minutes until heated through. Remove from heat.

          Fill the Plantain Boats: Spoon the black bean and quinoa mixture evenly into each plantain boat. Top with shredded cheese.

            Bake: Bake the filled plantain boats in the preheated oven for 25-30 minutes or until the plantains are tender and the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove the plantain boats from the oven. Allow them to cool slightly, then top with slices of avocado and a sprinkle of chopped cilantro. Serve with lime wedges on the side for an added zest.
