Sun-Dried Tomato Chicken Couscous

1 cup couscous

1 ½ cups chicken broth

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for heat)

½ cup sun-dried tomatoes, chopped

½ cup feta cheese, crumbled

1 cup fresh spinach, chopped

¼ cup fresh basil, chopped

Juice of 1 lemon

Zest of 1 lemon

Prepare the Couscous: In a medium saucepan, bring chicken broth to a boil. Add couscous, stir quickly, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork and set aside.

    Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, garlic powder, oregano, and red pepper flakes (if using). Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and let rest for a few minutes before slicing.

      Bring it Together: In the same skillet, add the chopped sun-dried tomatoes and sauté for about 1 minute. Next, stir in the chopped spinach and basil, cooking until spinach is wilted, about 2-3 minutes.

        Combine Ingredients: In a large mixing bowl, combine the fluffed couscous, sun-dried tomato and spinach mixture, sliced chicken, feta cheese, lemon juice, and lemon zest. Toss gently to combine all ingredients. Adjust seasoning with more salt and pepper if needed.

          Serve: Transfer the couscous mixture to a serving dish. Garnish with additional fresh basil and a sprinkle of feta cheese, if desired. Serve warm.
