Ingredients

4 pieces of plain naan bread

1 cup pizza sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1 cup cherry tomatoes, halved

1 medium zucchini, thinly sliced

1 red bell pepper, diced

1 small red onion, thinly sliced

1 cup fresh spinach leaves

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C) to ensure a crispy base for your naan pizzas.

Prepare the Veggies: In a large bowl, combine the cherry tomatoes, zucchini, red bell pepper, and red onion. Drizzle with olive oil, and season with garlic powder, dried oregano, salt, and pepper. Toss until the vegetables are evenly coated.

Assemble the Pizzas: Place the naan breads on a baking sheet. Spread a generous layer of pizza sauce on each naan, followed by an even coating of shredded mozzarella cheese.

Add the Veggies: Distribute the seasoned veggies evenly on top of the cheese. Make sure to cover each naan with a colorful variety of vegetables for an attractive presentation.

Top with Spinach: Scatter fresh spinach leaves over the top of each naan pizza, adding a pop of color and nutrients.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly, and the edges of the naan are golden brown.

Garnish and Serve: Once out of the oven, let the pizzas cool for a minute. Tear fresh basil leaves and sprinkle them on top for added flavor. Cut into slices and serve immediately.
