4 cups kale, chopped (stems removed)

2 ripe peaches, pitted and sliced

1 cup fresh blueberries

1/2 cup feta cheese, crumbled

1/4 cup sliced almonds (toasted)

1/4 cup red onion, thinly sliced

1 avocado, diced

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or maple syrup for vegan option)

Salt and pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Kale: In a large bowl, add the chopped kale. Using clean hands, massage the kale for about 2-3 minutes until it becomes slightly wilted and tender. This will help improve its texture.

    Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Adjust the seasoning to taste.
