Ingredients

Noodles:

8 oz. egg noodles (or your favorite type of noodle)

Beef Mixture:

1 lb ground beef (preferably lean)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch piece of ginger, grated

1 medium onion, thinly sliced

1 bell pepper, thinly sliced (red or green)

Sauce:

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 tablespoon brown sugar

1/2 teaspoon sesame oil

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

Garnish:

2 green onions, sliced

Sesame seeds

Fresh cilantro leaves (optional)

Instructions

Cook the Noodles:

    - In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

      Prepare the Sauce:

        - In a medium bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, black pepper, and red pepper flakes (if using). Set aside.

          Cook the Beef:

            - In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it up with a spatula.

              Add Aromatics:

                - Add the minced garlic, grated ginger, sliced onion, and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are tender and fragrant.

                  Combine Sauce and Noodles:

                    - Pour the prepared sauce over the beef mixture and stir well to combine. Cook for another 2 minutes to heat through. If the mixture seems too thick, add a splash of reserved pasta water.

                      Toss in the Noodles:

                        - Add the cooked noodles to the skillet. Toss everything together gently until the noodles are well coated with the sauce and heated through.

                          Serve:

                            - Divide the noodles among serving plates. Garnish with sliced green onions, sesame seeds, and fresh cilantro if desired. Enjoy hot!
