Stuffed Potato Pancakes with a Cheesy Twist

For the Potato Pancakes:

4 medium-sized russet potatoes, peeled and cubed

1 small onion, finely chopped

1 cup all-purpose flour

1 large egg

½ teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

Oil for frying

For the Cheesy Filling:

1 cup shredded cheddar cheese

½ cup cream cheese, softened

2 tablespoons fresh chives, chopped (or green onions)

Salt and pepper to taste

For Serving:

Sour cream or Greek yogurt

Fresh herbs for garnish (optional)

Instructions
 

Prepare the Potatoes: In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly. Mash until smooth and set aside.

    Make the Filling: In a mixing bowl, combine the cheddar cheese, cream cheese, chives, salt, and pepper. Mix well until smooth and set aside.

      Mix the Pancake Batter: In another bowl, combine the mashed potatoes with the chopped onion, flour, egg, garlic powder, paprika, salt, and pepper. Mix until you have a smooth batter. If it's too sticky, add a bit more flour as needed.

        Shape the Pancakes: Heat a skillet over medium heat and add a little oil. Once hot, take a generous handful of the potato mixture and flatten it in your palm. Place a tablespoon of the cheesy filling in the center, then fold the potato mixture around the filling to form a patty. Repeat with the remaining mixture and filling.

          Fry the Pancakes: In the same skillet, add more oil if necessary, and cook the stuffed potato pancakes for about 4-5 minutes on each side, or until golden brown and crispy. Make sure to carefully flip them so the filling doesn’t escape.
