Stuffed Mushrooms with Cream Cheese

20 large button mushrooms

8 oz (225g) cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (Panko for extra crunch)

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1/4 cup fresh parsley, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional for heat)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Mushrooms: Gently clean the mushrooms with a damp paper towel. Remove the stems and set aside. Scoop out a small amount of the insides from each mushroom cap using a small spoon or a melon baller, creating space for the filling.

      Make the Filling: Finely chop the mushroom stems you removed. In a medium mixing bowl, combine the chopped stems, softened cream cheese, grated Parmesan, breadcrumbs, minced garlic, green onions, parsley, salt, pepper, and crushed red pepper flakes if using. Mix well until all ingredients are evenly combined.

        Stuff the Mushrooms: Using a small spoon or your fingers, generously fill each mushroom cap with the cream cheese mixture, packing it slightly so it holds together.

          Arrange and Drizzle: Place the stuffed mushrooms on the prepared baking sheet. Drizzle a little olive oil over the top of each stuffed mushroom for added flavor and moisture.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

              Serve: Remove from the oven and let cool slightly. Serve warm as an appetizer or party snack, garnished with extra parsley if desired.
