Ingredients

6 cups fresh baby spinach, washed and dried

2 cups strawberries, hulled and sliced

1 cup sliced almonds, toasted

1/2 cup crumbled feta cheese

1/4 red onion, thinly sliced

1/2 cup poppy seed dressing (store-bought or homemade; recipe follows)

For Homemade Poppy Seed Dressing:

1/2 cup mayonnaise

1/4 cup apple cider vinegar

1/4 cup sugar

1-2 tablespoons poppy seeds

Salt and pepper to taste

Instructions

Prepare the Dressing (if making homemade):

    - In a bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth.

      - Stir in the poppy seeds and season with a pinch of salt and pepper. Adjust sweetness and tanginess to taste if necessary. Set aside.

        Toast the Almonds:

          - Preheat your oven to 350°F (175°C). Spread the sliced almonds on a baking sheet in a single layer.

            - Toast in the oven for about 8-10 minutes, or until golden brown and fragrant. Keep an eye on them to prevent burning. Remove and let cool.

              Assemble the Salad:

                - In a large salad bowl, add the fresh spinach.

                  - Top the spinach with sliced strawberries, toasted almonds, red onion, and feta cheese.

                    Dress the Salad:

                      - Drizzle the poppy seed dressing over the salad ingredients. Start with half the dressing and add more according to your taste preferences.

                        - Gently toss the salad to combine all ingredients without bruising the spinach.

                          Serve:

                            - Serve immediately for the freshest taste, or refrigerate for up to 30 minutes to allow the flavors to mingle. Toss again before serving if it sits for a while.
