2 pounds fresh strawberries, hulled and sliced

1/2 cup granulated sugar (divided)

1 teaspoon vanilla extract

1 cup heavy whipping cream

8 ounces cream cheese, softened

1 cup powdered sugar

1 teaspoon lemon juice

1 box (14 oz) graham crackers

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with 1/4 cup of granulated sugar and vanilla extract. Mix well and let the strawberries macerate for about 30 minutes, until they release their juices.

    Make the Whipped Cream: In another bowl, beat the heavy whipping cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form. Set aside.

      Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese, remaining 1/4 cup granulated sugar, and lemon juice until smooth and creamy.

        Combine: Gently fold the whipped cream into the cream cheese mixture until well blended, taking care not to deflate the whipped cream.

          Layer the Cake: In a 9x13 inch dish, spread a thin layer of the cream mixture on the bottom. Next, create a layer of graham crackers over the cream. Follow that with a layer of the macerated strawberries and their juices. Repeat the layering process (cream, graham crackers, strawberries) until all ingredients are used, finishing with a layer of the cream mixture on top.

            Chill: Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the graham crackers to soften.

              Serve: Before serving, garnish with fresh mint leaves if desired. Slice into squares and enjoy the refreshing layers of creamy and fruity bliss!
