2 medium yellow squash, sliced into ½-inch rounds

1 medium zucchini, sliced into ½-inch rounds

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

2 medium tomatoes, diced

1 cup vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Prep the Vegetables: Start by washing and slicing the yellow squash and zucchini into ½-inch rounds. Finely chop the onion, dice the bell pepper, and dice the tomatoes. Mince the garlic.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until they are soft and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Squash: Stir in the sliced yellow squash and zucchini into the pot. Cook, stirring frequently for about 5 minutes, until the squash starts to soften.

        Incorporate the Tomatoes and Spices: Add the diced tomatoes, vegetable broth, dried thyme, dried oregano, smoked paprika, salt, and pepper. Stir everything together to combine well.

          Simmer the Stew: Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 15-20 minutes, stirring occasionally, until the squash is tender and the flavors meld together.
