Ingredients

1 pound ribeye steak (or your preferred cut)

3 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

4 slices of artisan bread (such as ciabatta or sourdough)

1 cup arugula or mixed greens

1 medium tomato, sliced

1/2 avocado, sliced (optional)

4 slices of provolone or sharp cheddar cheese

Optional condiments: mustard, aioli, or a zesty horseradish sauce

Instructions

Marinate the Steak: In a bowl, combine olive oil, balsamic vinegar, minced garlic, rosemary, thyme, salt, and pepper. Place the ribeye steak in the marinade, coating it well. Let it marinate for at least 30 minutes at room temperature, or up to 2 hours in the fridge for deeper flavor.

Cook the Steak: Preheat your grill or stovetop skillet over medium-high heat. Remove the steak from the marinade, letting any excess drip off. Cook the steak for about 4-5 minutes on each side for medium-rare (adjust time according to your desired doneness). Use a meat thermometer if needed; Aim for an internal temperature of about 130°F for medium-rare.

Rest the Steak: Once cooked, transfer the steak to a cutting board and let it rest for about 5-10 minutes. This allows the juices to redistribute.

Toast the Bread: While the steak is resting, slice the artisan bread in half and toast it on the grill or in a skillet until golden brown.

Slice the Steak: After resting, slice the steak thinly against the grain to ensure it remains tender.

Assemble the Sandwich: On the bottom half of each toasted bread slice, layer a handful of arugula, several slices of cooked steak, a slice of cheese, tomato slices, and avocado (if using). Add your preferred condiments to the top slice of bread.

Serve: Close the sandwich with the top half of the bread. You can press it slightly to pack the fillings, then slice it in half if desired. Serve immediately with chips, a salad, or your favorite side.
