Steak and Creamy Pasta

Ingredients
  

2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

8 ounces fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped (for garnish)

Optional: red pepper flakes, for added heat

Instructions
 

Prepare the Steaks:

    - Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 20-30 minutes. Season both sides generously with salt and black pepper.

      Cook the Pasta:

        - In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

          Sear the Steaks:

            - In a large skillet or grill pan, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare (or to your desired doneness). Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

              Create the Creamy Sauce:

                - In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant (do not burn). Then, add the cream and bring to a gentle simmer, stirring occasionally.

                  Add Cheese and Seasoning:

                    - Gradually whisk in the grated Parmesan cheese until it melts and the sauce is creamy. If the sauce is too thick, you can add a bit of the reserved pasta water to reach your desired consistency. Stir in the Italian seasoning and adjust seasoning with salt and black pepper as needed.

                      Combine Pasta and Sauce:

                        - Add the cooked fettuccine to the skillet, tossing it in the creamy sauce until well-coated. If desired, sprinkle in some red pepper flakes for a kick.

                          Serve:
