Spinach Garlic Meatballs

1 lb ground beef (or ground turkey for a lighter option)

1 cup fresh spinach, finely chopped

3 cloves garlic, minced

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional, for a kick)

1 tsp dried oregano

1/4 cup milk

2 tbsp olive oil (for cooking)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, parsley, egg, salt, black pepper, red pepper flakes, and dried oregano. Mix until everything is well incorporated.

      Gradually add the milk to the mixture until it reaches a consistency that holds together but isn’t overly wet. You may need to adjust with more breadcrumbs or milk depending on the moisture content of your meat.

        Roll the mixture into balls, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

          In a large skillet, heat the olive oil over medium heat. Once hot, add half of the meatballs and brown them on all sides, approximately 5-7 minutes. Remove and set aside, then repeat with the remaining meatballs.

            Once all meatballs are browned, transfer them back to the baking sheet and place them in the preheated oven. Bake for 15-20 minutes, or until they reach an internal temperature of 160°F (70°C).

              Serve warm, garnished with additional parsley and with your favorite pasta or dipping sauce.
