Spicy Tuna and Avocado Sushi Stack

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 ½ cups sushi-grade tuna, diced

1 tablespoon sriracha (adjust to taste)

1 tablespoon mayonnaise (preferably Kewpie)

1 ripe avocado, diced

1 tablespoon lemon juice

½ cucumber, julienned

2 tablespoons green onions, sliced

1 tablespoon sesame seeds

Nori sheets, cut into strips (for garnish)

Soy sauce and pickled ginger (for serving)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold running water until the water runs clear. In a medium pot, combine rice and water; bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice: In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Gently mix this seasoning into the cooked rice using a spatula, being careful not to mush the grains. Allow the rice to cool to room temperature.

      Prepare the Spicy Tuna Mixture: In a bowl, combine diced tuna, sriracha, and mayonnaise. Mix well until the tuna is evenly coated. Adjust the level of sriracha according to your spice preference.

        Prepare the Avocado Mixture: In another bowl, combine the diced avocado with lemon juice, gently folding to coat the avocado without mashing it.

          Assemble the Sushi Stack: Using a ring mold or a small bowl, layer the ingredients in this order:

            - Start with a base of sushi rice, pressing down gently to compact it.

              - Add a layer of the spicy tuna mixture, smoothing it down.

                - Next, add a layer of the avocado mixture.

                  - Top with a layer of julienned cucumber.

                    - Sprinkle sliced green onions and sesame seeds on top.

                      Finish the Stack: Carefully remove the ring mold or bowl, ensuring the stack holds together. Garnish with nori strips for added texture and flavor.

                        Serve: Slice the sushi stack into wedges for easy serving. Enjoy it with soy sauce and pickled ginger on the side for dipping.
