Instructions

Marinate the Chicken:

    - In a mixing bowl, combine soy sauce, fish sauce, lime juice, honey, minced garlic, grated ginger, and red chili flakes. Mix well.

      - Add the sliced chicken thighs to the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for stronger flavor).

        Cook the Rice:

          - Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

            - In a medium saucepan, bring water (or chicken broth) to a boil. Add a pinch of salt and the rinsed rice.

              - Reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

                Sauté the Vegetables:

                  - In a large skillet over medium heat, heat sesame oil. Add the sliced bell peppers, broccoli florets, and julienned carrot.

                    - Stir-fry the vegetables for about 4-5 minutes, or until they are tender-crisp. Add 2 tablespoons of soy sauce and continue to cook for another 1-2 minutes. Remove from heat.

                      Cook the Chicken:

                        - In the same skillet used for the vegetables, add a bit more oil if needed and heat over medium-high heat.

                          - Once hot, add the marinated chicken pieces in a single layer. Sauté for about 5-7 minutes until they are cooked through and slightly caramelized.

                            - Ensure the chicken reaches an internal temperature of 165°F (75°C).

                              Assemble the Bowls:

                                - Divide the cooked rice among serving bowls. Top each bowl with the sautéed vegetables and a generous portion of the spicy chicken.

                                  - Garnish with chopped cilantro, sliced green onions, and lime wedges. Drizzle sriracha or your favorite chili sauce for an extra kick.

                                    Enjoy:

                                      - Serve immediately and enjoy the burst of flavors and spices in your Fiery Thai Chicken Rice Bowls!
