Ingredients

1 lb ground beef (or ground chicken)

1/2 cup cooked rice (can be jasmine or sticky rice)

1/4 cup chopped green onions

3 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon vegetable oil (for frying)

Sesame seeds (for garnish)

Additional chopped green onions (for garnish)

Instructions

Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef (or chicken), cooked rice, chopped green onions, minced garlic, minced ginger, soy sauce, gochujang, sesame oil, brown sugar, black pepper, and salt. Mix everything well until fully combined.

Form the Meatballs: Using your hands, shape the mixture into bite-sized meatballs, about 1 to 1.5 inches in diameter. You should yield around 20-24 meatballs.

Heat the Oil: In a large skillet, heat the vegetable oil over medium heat. Ensure that the oil is hot enough before adding the meatballs, which helps them sear and brown nicely.

Cook the Meatballs: Carefully place the meatballs in the skillet, making sure not to overcrowd the pan. Cook for about 5-7 minutes on each side, turning them occasionally until they are golden brown and cooked through (an internal temperature of 165°F).

Glaze the Meatballs: Once cooked, you can create a glaze by mixing additional soy sauce and gochujang in the skillet. Drizzle this mixture over the meatballs and toss them gently to coat. Allow them to simmer in the glaze for an additional 2-3 minutes.

Serve and Garnish: Transfer the meatballs to a serving dish. Sprinkle with sesame seeds and additional chopped green onions for garnish. These can be served alone or with a side of steamed rice and kimchi for a delicious meal.
