Ingredients

For the Salmon:

4 salmon fillets (6 oz each)

1/4 cup honey

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon olive oil

Salt and black pepper to taste

Lemon wedges for serving

Chopped green onions for garnish

For the Rice:

1 cup jasmine rice

2 cups water or vegetable broth

1 tablespoon butter or oil

Salt to taste

Optional: Fresh cilantro for garnish

Instructions

Prepare the Marinade: In a medium bowl, whisk together honey, minced garlic, soy sauce, sriracha, olive oil, salt, and black pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a zip-top bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice, water (or vegetable broth), a tablespoon of butter or oil, and a pinch of salt. Bring to a boil over medium-high heat.

Simmer the Rice: Once boiling, reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed. Remove from heat and let sit, covered, for an additional 5 minutes. Fluff with a fork before serving.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Salmon: Remove the salmon from the marinade and place it on a lined baking sheet. (Discard the leftover marinade.) Bake the salmon for 12-15 minutes or until the salmon flakes easily with a fork.

Serve: To plate, scoop a portion of rice onto each plate, place a salmon fillet on top, and drizzle any remaining sauce from the baking sheet over the salmon. Garnish with chopped green onions, fresh cilantro if using, and serve with lemon wedges on the side for an extra zing.
