1 large head of cauliflower

1/4 cup olive oil

2 tablespoons smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon cumin

1 teaspoon salt

1 teaspoon black pepper

Juice of 1 lemon

Fresh parsley for garnish

Optional: Greek yogurt or tahini for drizzling

Prepare the Cauliflower: Start by removing the green leaves from the base of the cauliflower. Place it stem-side down on a cutting board. Slice the cauliflower into 3/4 inch thick steaks. You should be able to get about 2-3 steaks per head; the remaining florets can be saved for another dish.

    Make the Marinade: In a medium bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, cumin, salt, black pepper, and lemon juice until well combined.

      Marinate the Steaks: Brush both sides of the cauliflower steaks generously with the marinade. Let them sit for at least 20 minutes to absorb the flavors. For deeper flavor, you can let them marinate in the refrigerator for up to 2 hours.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high heat.
