8 chicken drumsticks

4 cloves garlic, minced

2 limes (zested and juiced)

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh cilantro, chopped (for garnish)

1 red onion, cut into wedges

1 bell pepper (any color), sliced

1 cup cherry tomatoes

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a large bowl, combine the minced garlic, lime zest, lime juice, olive oil, honey, smoked paprika, cumin, cayenne pepper, salt, and black pepper. Mix well to create a marinade.

      Marinate the Drumsticks: Add the chicken drumsticks to the bowl and toss them in the marinade until fully coated. For best results, let the drumsticks marinate for at least 30 minutes (or up to overnight in the fridge).

        Prepare the Vegetables: In a separate bowl, toss the red onion wedges, bell pepper slices, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.

          Arrange on a Tray: Line a large baking tray with parchment paper. Place the marinated drumsticks on one side of the tray and scatter the prepared vegetables on the other side.
