Spicy Corn & Black Bean Tacos

1 can (15 oz) black beans, drained and rinsed

1 cup fresh or frozen sweet corn

1 medium red onion, finely chopped

2 cloves garlic, minced

1 jalapeño pepper, seeds removed and finely diced

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper, to taste

2 tbsp olive oil

1 small bunch cilantro, chopped

Juice of 1 lime

8 small corn tortillas

Avocado slices and crumbled feta cheese (for topping)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until it becomes translucent.

    Add Garlic and Jalapeño: Stir in the minced garlic and diced jalapeño. Cook for another 1-2 minutes until fragrant.

      Incorporate Spices: Sprinkle in the cumin, smoked paprika, and chili powder. Mix well and let the spices toast for about 1 minute.

        Stir in Corn and Beans: Add the sweet corn and black beans into the skillet. Season with salt and pepper to taste. Cook for about 5-7 minutes, stirring occasionally until heated through and slightly charred.

          Finish with Cilantro and Lime: Remove the skillet from heat and stir in the chopped cilantro and lime juice. Mix until well combined.

            Warm the Tortillas: In a separate dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

              Assemble the Tacos: Spoon the spicy corn and black bean mixture onto each tortilla. Top with slices of avocado and crumbled feta cheese if desired.
