1 pound ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1-2 chipotles in adobo sauce, finely chopped (adjust based on spice preference)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1/4 cup fresh cilantro, chopped

1 avocado, sliced (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions
 

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

    Flavor the Meat: Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Stir in the chopped chipotles, smoked paprika, ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until well combined.

      Mix the Cheeses: Remove the skillet from heat and stir in the shredded Monterey Jack and cheddar cheese until melted and evenly distributed. Add the chopped cilantro and mix well.

        Assemble the Quesadilla Pockets: Lay one flour tortilla flat on a clean surface. Spoon a generous amount of the turkey and cheese mixture onto one half of the tortilla, then fold the other half over to create a pocket. Press down gently. Repeat with the remaining tortillas and filling.

          Cook the Quesadilla Pockets: Wipe the skillet clean and return it to medium heat. Lightly grease with cooking spray or a drizzle of olive oil. Carefully place the folded quesadilla pockets in the skillet, cooking for about 3-4 minutes on each side or until golden brown and crispy.
