Ingredients

2 boneless, skinless chicken breasts

1 tablespoon Cajun seasoning (more to taste)

2 tablespoons olive oil

Salt and black pepper (to taste)

8 ounces fettuccine pasta

2 tablespoons unsalted butter

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon smoked paprika

½ teaspoon crushed red pepper flakes

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts with Cajun seasoning, salt, and black pepper. Make sure both sides are well coated.

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook for 6-7 minutes on each side or until cooked through and juices run clear. Remove from skillet and let rest for a few minutes, then slice into strips.

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

Make the Alfredo Sauce: In the same skillet used for the chicken, reduce the heat to low and melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant.

Combine Cream and Cheese: Pour in the heavy cream and bring to a gentle simmer. Gradually stir in the grated Parmesan cheese until a smooth sauce forms. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.

Season the Sauce: Stir in the smoked paprika and crushed red pepper flakes. Taste and adjust seasoning with more salt, black pepper, or Cajun seasoning if desired.

Combine: Add the cooked fettuccine and sliced chicken to the sauce, tossing to coat the pasta evenly with the creamy mixture. Heat everything together for another minute.

Serve: Plate the Spicy Cajun Chicken Alfredo, garnish with chopped fresh parsley, and sprinkle extra grated Parmesan if desired. Enjoy!
