Spicy BBQ Chicken Skewers with Corn Salad

1.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)

1/4 cup olive oil

1/4 cup BBQ sauce (spicy variety recommended)

2 tablespoons honey

1 tablespoon apple cider vinegar

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

2 cloves garlic (minced)

Salt and pepper to taste

Skewers (soaked in water if wooden)

For the Corn Salad:

2 cups fresh corn kernels (or canned, drained)

1 red bell pepper (diced)

1 cucumber (diced)

1/2 red onion (finely chopped)

1/4 cup fresh cilantro (chopped)

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

Marinate the Chicken: In a large bowl, whisk together the olive oil, BBQ sauce, honey, apple cider vinegar, smoked paprika, cayenne pepper, minced garlic, salt, and pepper. Add the chicken pieces and toss until well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for maximum flavor).
