Spiced Turmeric Lentil Soup

1 cup dried green or brown lentils, rinsed and drained

1 tablespoon coconut oil (or olive oil)

1 medium onion, diced

2 cloves garlic, minced

1-inch piece fresh ginger, grated

2 carrots, diced

2 celery stalks, diced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes, with juices

6 cups vegetable broth or water

1 tablespoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup spinach or kale, chopped

Juice of 1 lemon

Fresh cilantro or parsley, for garnish

Prep the Aromatics: In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Add Flavor: Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

      Cook the Veggies: Add the carrots, celery, and red bell pepper to the pot. Sauté for about 5-7 minutes, until the vegetables begin to soften.
