Spiced Sweetcorn Polenta Fries

1 cup polenta (cornmeal)

4 cups vegetable broth (or water)

1 cup sweetcorn (fresh or frozen)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons olive oil (plus more for drizzling)

1 tablespoon fresh parsley, chopped (for garnish)

Zesty dipping sauce (such as aioli, yogurt-based dip, or salsa) for serving

Instructions
 

Cook the Polenta: In a large saucepan, bring the vegetable broth (or water) to a boil. Gradually whisk in the polenta, stirring continuously to avoid lumps. Lower the heat and cook, stirring, for about 5-7 minutes, until the polenta thickens and pulls away from the sides of the pan.

    Add Sweetcorn and Spices: Stir the sweetcorn, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper into the polenta. Mix well to combine all ingredients evenly.

      Spread the Polenta: Transfer the polenta mixture into a greased baking dish, smoothing it out to an even thickness (about 1-inch thick). Allow it to cool at room temperature for about 15-20 minutes. For quicker set-up, you can refrigerate it for an hour or until firm.

        Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

          Cut into Fries: Once the polenta is set, turn it out onto a cutting board. Using a sharp knife, cut the polenta into fry shapes (about 1/4 inch thick).

            Bake the Fries: Arrange the polenta fries on the lined baking sheet in a single layer. Drizzle with olive oil, ensuring they are well coated. Bake for about 25-30 minutes, turning halfway through, until golden and crispy.
