6 pounds of mixed apples (Granny Smith, Honeycrisp, and Fuji), peeled, cored, and quartered

1 cup granulated sugar (adjust to taste based on apple sweetness)

1 cup brown sugar, packed

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/2 teaspoon ground allspice

1/4 teaspoon salt

2 tablespoons lemon juice

1 teaspoon pure vanilla extract

1 cup apple cider or apple juice

Optional: 1/2 cup chopped pecans or walnuts for added texture

Prepare the Apples: Start by peeling, coring, and quartering the apples. You can use a variety of apples for a more complex flavor.

    Mix Ingredients: In a large bowl, combine the quartered apples, granulated sugar, brown sugar, cinnamon, nutmeg, cloves, allspice, and salt. Toss the apples until they are evenly coated with the sugar and spices.

      Layer in the Crockpot: Place the spiced apples into the crockpot. Add the lemon juice, apple cider (or juice), and vanilla extract. If using, mix in the chopped nuts.

        Cook: Cover and cook on low for 8 to 10 hours, stirring occasionally. As the apples cook down, they will turn soft and become fragrant.

          Blend: Once the apples are fully cooked and soft, use an immersion blender to blend the apple mixture until smooth. If you prefer a chunkier texture, just stir it well without blending.

            Cook Down More (Optional): If you prefer a thicker apple butter, return the blended mixture to the crockpot and continue to cook on low for an additional 2 to 4 hours with the lid slightly ajar to allow moisture to escape.

              Cool and Store: Once the apple butter reaches your desired consistency, allow it to cool completely. Transfer it to sterilized jars or airtight containers. Store in the refrigerator for up to three weeks or can it for longer preservation.
