1 cup rolled oats

1 cup almond flour

1/2 cup brown sugar, packed

1/4 cup honey or maple syrup

1/3 cup coconut oil, melted

1 teaspoon vanilla extract

1 1/2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup raisins or chopped dates (optional)

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, baking powder, cinnamon, ginger, cardamom, cloves, nutmeg, and salt. Stir well until fully mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients, mixing until just combined. If using, fold in the raisins or chopped dates and chopped nuts.

          Form Cookies: Using a tablespoon or small cookie scoop, drop cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie as they will spread a little while baking. Flatten each cookie slightly with the back of a spoon or your fingers.

            Bake: Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden but the centers are still soft.

              Cool: Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
