Ingredients

1 cup rolled oats

1 cup almond flour (or whole wheat flour)

1/2 cup coconut sugar (or brown sugar)

1/4 cup almond butter (or peanut butter)

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/4 teaspoon black pepper

1/2 cup raisins or chocolate chips (optional)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, spices (cinnamon, ginger, cardamom, cloves, black pepper), and salt. Stir until well integrated.

Prepare Wet Ingredients: In a separate bowl, mix the almond butter, maple syrup, and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir until thoroughly combined. If using, fold in the raisins or chocolate chips for an extra touch of sweetness and texture.

Form Cookies: Using a tablespoon, scoop out portions of the dough and shape them into balls. Place them on the prepared baking sheet, leaving some space between each cookie as they will spread slightly.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look slightly underdone; they will firm up as they cool.

Cool Down: Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
