Ingredients

1 cup unsweetened almond milk (or any milk of your choice)

3 tablespoons chia seeds

1 tablespoon maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon cinnamon

½ teaspoon nutmeg

2 medium-sized apples, peeled, cored, and diced

2 tablespoons brown sugar (or coconut sugar)

1 tablespoon lemon juice

1 cup granola (store-bought or homemade)

½ cup chopped walnuts or pecans (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Chia Pudding: In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, vanilla extract, cinnamon, and nutmeg. Make sure there are no lumps from the chia seeds. Cover and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.

Cook the Spiced Apples: In a medium saucepan over medium heat, combine the diced apples, brown sugar, and lemon juice. Sauté for about 5-7 minutes until the apples are tender but still hold their shape, and the mixture is fragrant. Stir in a pinch of cinnamon if desired. Remove from heat and let cool slightly.

Assemble the Parfaits: In serving glasses or bowls, layer the spiced apple mixture followed by a layer of the chia pudding. Repeat the layering until the glasses are filled, finishing with a layer of chia pudding on top.

Top it Off: Add a generous sprinkle of granola on the top layer of chia pudding and sprinkle with chopped walnuts or pecans if using.

Garnish: Finish with a sprig of fresh mint on top for a pop of color and freshness.

Serve: Enjoy your delicious Spiced Apple Chia Parfaits immediately, or refrigerate for up to 2 hours before serving for a chilled treat!
