1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized or cut into thin strips

4 cloves garlic, minced

1 small onion, thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 lemon (juice and zest)

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Grated Parmesan cheese, optional for serving

Instructions
 

Prepare the Zucchini Noodles: If you haven’t already, spiralize the zucchinis or slice them into thin strips. Set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil and butter. Once melted, add the sliced onion and cook for about 2-3 minutes until translucent. Then add minced garlic and red pepper flakes, and sauté for another 30 seconds until fragrant.

      Cook the Shrimp: Increase the heat to medium-high. Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes, turning halfway through, until the shrimp are pink and opaque.

        Add Zucchini Noodles: Stir in the zucchini noodles and cook for an additional 1-2 minutes, tossing gently until the noodles are just tender but still crisp.

          Finish with Lemon: Remove the skillet from heat, and squeeze fresh lemon juice over the shrimp and zucchini, adding zest for extra flavor. Toss everything well to combine.
