Ingredients

12 ounces spaghetti

6 tablespoons unsalted butter

10 fresh sage leaves

1 small garlic clove, minced

½ teaspoon sea salt (adjust to taste)

¼ teaspoon black pepper

½ cup grated Parmesan cheese, plus extra for serving

Zest of 1 lemon

2 tablespoons toasted pine nuts (optional)

Fresh parsley, chopped for garnish

Instructions

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti and set aside.

Prepare the Brown Butter: In a large skillet, add the unsalted butter over medium heat. Allow it to melt and begin to bubble. Stir occasionally and keep an eye on it; after about 5-7 minutes, it will start turning a golden brown and develop a nutty aroma.

Add Sage and Garlic: Once the butter is brown, add the fresh sage leaves to the skillet. They will sizzle upon contact. Cook for about 1-2 minutes until the sage becomes crispy. Add the minced garlic, and sauté for an additional 30 seconds, being cautious not to let the garlic burn.

Combine Pasta and Sauce: Add the drained spaghetti to the skillet, along with the sea salt, black pepper, and lemon zest. Toss everything together, adding reserved pasta water a little at a time until you reach the desired sauce consistency.

Finish with Cheese and Nuts: Remove the skillet from heat and stir in the Parmesan cheese until melted and well incorporated. For extra crunch and flavor, toss in the toasted pine nuts if using.

Serve: Plate the spaghetti, garnishing with additional Parmesan cheese and freshly chopped parsley. Enjoy your delightful dish immediately!
