Spaghetti Squash Parmesan Boats

1 medium spaghetti squash

1 cup marinara sauce

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup fresh spinach, chopped

1 teaspoon Italian seasoning

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Carefully slice the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and stringy insides. Brush the cut sides with olive oil and season with salt and pepper.

      Roast the Squash: Place the squash halves cut-side down on a baking sheet. Roast in the preheated oven for about 30-40 minutes, or until the flesh is fork-tender. Allow it to cool slightly before handling.

        Sauté the Spinach: While the squash is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and stir in Italian seasoning.

          Scrape the Squash: Once the squash is cool enough to handle, use a fork to gently scrape the flesh into strands and place them into a mixing bowl.

            Mix the Filling: In the same bowl, add the sautéed spinach, marinara sauce, half of the mozzarella cheese, and ¼ cup of Parmesan cheese. Mix everything together well. Taste and adjust the seasoning with salt and pepper if needed.

              Fill and Top the Squash: Spoon the filling evenly into the squash halves. Top each with the remaining mozzarella and Parmesan cheese.

                Final Bake: Return the filled squash boats to the oven and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
