Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

8 oz (225 g) spaghetti

2 cups fresh spinach, chopped

1 cup sun-dried tomatoes in oil, drained and roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tbsp olive oil (from sun-dried tomatoes)

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic & Spinach: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cook until wilted (about 2-3 minutes).

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and red pepper flakes (if using). Cook for another 2 minutes, allowing the flavors to meld.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream. Stir well and let it simmer for about 3-4 minutes. Add the grated Parmesan cheese, stirring continuously until the sauce thickens slightly. Adjust seasoning with salt and pepper.

          Combine: Add the cooked spaghetti into the sauce, tossing to coat evenly. If the sauce is too thick, add some reserved pasta water, a little at a time, until desired consistency is reached.

            Serve: Plate the spaghetti topped with fresh basil leaves for garnish. Enjoy your creamy and flavorful meal!
