For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup mini marshmallows

½ cup milk chocolate chips

For the topping:

1 cup mini marshmallows

½ cup chocolate chips

¼ cup crushed graham crackers

Instructions
 

Prepare the crust:

    - Preheat the oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

      - In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of the prepared baking pan to create an even crust. Bake for about 10 minutes, then remove from the oven and let cool slightly.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy using a hand mixer or stand mixer.

              - Gradually add the sugar and continue to beat until well combined.

                - Add the eggs one at a time, mixing on low speed until just incorporated. Then, mix in the vanilla extract.

                  - Gently fold in the mini marshmallows and milk chocolate chips with a spatula until evenly distributed in the mixture.

                    Assemble and bake:

                      - Pour the cheesecake filling over the pre-baked crust, spreading it evenly with a spatula.

                        - Bake in the preheated oven for 25-30 minutes or until the edges are slightly golden and the center is set but slightly wobbly. Remove from the oven and let cool at room temperature.

                          Add the topping:

                            - While the cheesecake is cooling, turn on your broiler to high. Once the cheesecake has cooled for about 30 minutes, sprinkle mini marshmallows evenly on top.

                              - Place the cheesecake under the broiler for 1-2 minutes, watching closely until the marshmallows are golden brown and toasted. Remove from the oven and let cool completely.

                                - Once cooled, sprinkle the chocolate chips and crushed graham crackers on top for the final touch.

                                  Chill and serve:

                                    - Transfer the pan to the refrigerator and chill for at least 4 hours, or overnight for best flavor and texture.

                                      - When ready to serve, use the parchment overhang to lift the cheesecake out of the pan and cut into bars.
