Ingredients

1 pound (about 450g) whole carrots, peeled and cut into fry shapes

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon black pepper

Optional: fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Carrots: In a large mixing bowl, toss the carrot fries with the olive oil, ensuring they are well-coated.

Create the Glaze: In a separate small bowl, mix the maple syrup, smoked paprika, garlic powder, sea salt, and black pepper until well combined.

Combine: Drizzle the maple glaze over the oiled carrot fries, and toss again to ensure each fry is evenly coated.

Arrange on Baking Sheet: Spread the carrot fries out on the prepared baking sheet in a single layer. Avoid overcrowding for the best crispiness.

Roast: Bake in the preheated oven for about 25-30 minutes, or until the fries are tender and lightly caramelized, flipping halfway through for even cooking.

Garnish and Serve: Once done, remove from the oven and let cool for a couple of minutes. Optionally sprinkle with fresh chopped parsley before serving. Enjoy your smoky, sweet, and savory carrot fries!
