2 lbs baby potatoes, quartered

1 cup shredded Parmesan cheese

1/2 cup all-purpose flour

2 large eggs

1/4 cup milk

3 tablespoons butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup chopped fresh chives (for garnish)

Optional: sour cream or Greek yogurt for serving

Instructions
 

Cook the Potatoes: Place the quartered baby potatoes in a large pot and cover them with water. Add a generous pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until they are tender when pierced with a fork. Drain and let them cool slightly.

    Mash the Potatoes: In a large bowl, use a potato masher or a fork to smash the potatoes lightly. You want a mix of chunky and smooth textures for a better bite.

      Prepare the Waffle Batter: Add the melted butter, flour, shredded Parmesan, eggs, milk, garlic powder, onion powder, paprika, and salt and pepper to the mashed potatoes. Mix until everything is well combined, but don't overmix; leave some texture.

        Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Brush with a little oil or cooking spray to prevent sticking.

          Cook the Waffles: Scoop about 1/2 cup of the potato mixture into the waffle iron. Close and cook for about 5-7 minutes or until the waffles are golden brown and crispy. Repeat with the remaining mixture, ensuring to oil the iron as needed.
