2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

4 large carrots, sliced

3 medium potatoes, cubed

1 cup button mushrooms, halved

1 cup beef broth

1/2 cup balsamic vinegar

2 tablespoons tomato paste

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

2 bay leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes. Transfer the beef to the slow cooker.
