Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon dried thyme (or 2 teaspoons fresh thyme)

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup low-sodium chicken broth

1 tablespoon honey (optional for sweetness)

Fresh thyme sprigs for garnish

Instructions

Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and paprika. Set aside.

Heat the Skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the seasoned chicken breasts. Sear for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside on a plate.

Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

Add Liquid Ingredients: Pour in the chicken broth, lemon juice, lemon zest, and honey (if using). Scrape the bottom of the skillet with a wooden spoon to deglaze and release any brown bits.

Add Tomatoes and Thyme: Add the halved cherry tomatoes and thyme. Bring the mixture to a simmer and let it cook for 3-4 minutes until the tomatoes start to soften.

Combine and Heat Through: Return the chicken to the skillet, and spoon the lemon-tomato mixture over the top. Let everything simmer together for an additional 3-5 minutes, allowing the flavors to meld.

Serve: Garnish with fresh thyme sprigs and an extra sprinkle of lemon zest for a bright finish. Serve immediately, ideally over a bed of rice or with crusty bread to soak up the sauce.
